I make one of these microwave scrambles almost every day at the office. With practice they always turn out awesome and can be made in less than 5 minutes. Co-workers are always commenting on how awesome my breakfast looks, its really not that hard.

Step 1 – Crack some skulls… I mean eggs. I usually do 4 max but you can do less just keep in mind that the time will decrease with less eggs. I like using this wide mouth 16oz jars Scramble thoroughly with fork. The metal jar lids will start to rust if you use them too much. I bought these plastic lids which are easier to clean. Today I’m adding some leftover ingredients from last nights dinner. Sauteed onions, jalapenos, 1/2 hamburger patty, 1/2 slice of bacon. You can use your imagination, put whatever you want in. Just keep in mind the more things you put in the more time its going to take to cook. I added the bacon and ground beef first and will add the onions and jalapenos a bit later. You can add them all up front if you want. I always add 1/2oz of cheese which helps with the texture. Mix it up Place in center of microwave (I know this microwave is gross but its the office microwave and some people don’t think its necessary to clean up after themselves) This is a big scramble so I’m starting the time at 1:30 and will check after about a minute to stir if needed. I’m using full power. This is a 1500 watt microwave. If you have a lower power microwave you may need to adjust the time. I stopped with 22 seconds left, you have to watch it and stir when you start to see it cooking. Just mix it up. Starting to be a bit scrambled! Back in, I usually just hit the +30 seconds button and start it 30 seconds at a time. Pulled it out after 30. Time to add the onion and jalapeno (this is optional) Back in for 30 seconds Watch it the whole time, do not just put it in for 30 and think you can let it go. You must mix it consistently for it to turn out. Starting to firm up, keep mixing to distribute the moisture. Keep mixing! Hitting that “Add 30” button to start with 30 seconds. Looks good. I can’t stress this enough, you must keep an eye on it the whole time and mix when it starts to firm up. It can actually come out the top and overflow like a egg volcano if you don’t pay attention. CAUITION!! – The jar will be pretty hot. I usually use paper towels to hold it. Mix one last time and then dump your eggs out on a plate. I like to immediately top with 1/2 oz cheese. mmm melty. IMPORTANT! – While the jar is warm wash it out and scrape out all the eggs. This is super important because it will be a HUGE pain in the ass to clean if you let it cool and dry. Clean it thoroughly, you’ll be glad you did. Also, clean up the sink and counter and don’t leave a mess, you’re not an animal. A clean jar is a happy jar! Finally, eat that scramble! I like to add hot sauce 🙂
